In order to evaluate effects of extraction techniques on the physicochem. characteristics and antioxidant activities of kiwifruit polysaccharides (KPS), and further explore KPS as functional food ingredients, both microwave-assisted extraction (MAE) and ultrasonic-assisted extraction (UAE) were optimized for the extraction of KPS. Furthermore, the physicochem. structures and antioxidant activities of KPS extracted by different techniques were investigated. The optimal extraction conditions of UAE and MAE for the extraction of KPS were obtained by response surface methodol. Different extraction techniques significantly affected the contents of uronic acids, mol. weights, molar ratios of constituent monosaccharides, and the degree of esterification of KPS. Results showed that KPS exhibited remarkable DPPH and ABTS radical scavenging activities, and reducing power. The high antioxidant activities observed in KPS extracted by the MAE method (KPS-M) might be partially attributed to its low mol. weight and high content of unmethylated galacturonic acid. Results suggested that the MAE method could be a good potential technique for the extraction of KPS with high antioxidant activity, and KPS could be further explored as functional food ingredients.

The impact of ripening on the dry-hop aroma potential and chem. development of Cascade hops is not well understood. Therefore, 5-6 weekly hop samples were collected over the 2014, 2015 and 2016 harvests. Concentrations of humulones did not change as a function of harvest date, while total hop essential oil content displayed significant pos. trends. Concentrations of thiol precursors decreased over harvest while concentrations of free thiols increased. These weekly samples were used to dry-hop an unhopped base beer. Overall hop aroma intensity and citrus quality attributed to beer during dry-hopping increased as a function of harvest date. These results suggest that for brewers to maximize the efficiency of hop usage, early harvested Cascades might be better for bittering, while, later harvested Cascades might be better for dry-hopping or aroma additions because they attributed more intense citrus aromas to beer and had higher concentrations of free thiols and terpene alcs.

Four water-soluble polysaccharides were extracted from Pleurotus eryngii, Flammulina velutipes, Pleurotus ostreatus and white Hypsizygus marmoreus. Using anion exchange and gel permeation chromatog., a neutral and an acidic fraction were purified from each water-soluble polysaccharide. Their mol. weights were all around 20 kDa except that the acidic polysaccharide from Pleurotus ostreatus (named WPOPA) had a lower mol. weight of 5 kDa. Four neutral polysaccharides were mainly composed of galactose (42.7%-69.1%), followed by Man (19.4%-39.3%) and Glc (1.1%-15.9%). Four acidic polysaccharides contained glucose (59.0%-81.8%) as major sugar and minor glucuronic acid (4.5%-9.5%). Acidic polysaccharides exhibited stronger antioxidant activities than neutral fractions, and WPOPA showed the best antioxidant effects. Structural anal. indicated WPOPA had β-(1 → 6)-glucan backbone branched at O-3 by β-1,3-D-Glcp, t-β-D-Glcp and t-β-D-GlcpA. This investigation would be useful for screening natural antioxidants and significant in developing mushroom polysaccharides as functional foods.

These catalysts were demonstrated to be novel, effective, and green for the synthesis of 5-substituted 1H-tetrazoles from aryl nitriles in water. In these systems, 5-substituted 1H-tetrazoles are produced as the only product. Fe3+ species were identified as active sites. The ordered mesoporous iron-silica catalyst with the ligand displayed better catalytic activity compared to iron-silica catalyst without the ligand, which was ascribed to the improvement of the inter-action of iron with the support. The catalysts can be easily separated using simple recovery and reused several times with consistent activity.

In addition to their wide therapeutic application, benzoates and benzoic acid derivatives are the most commonly utilized food preservatives. The purpose of this study was to estimate the antioxidant, anti-diabetic, and anti-obesity activities of four 2-(phenylthio)-Et benzoate derivatives utilizing standard biomedical assays. The results revealed that the 2a compound has potent antidiabetic activity through the inhibition of α-amylase and α-glycosidase with IC50 doses of 3.57 ± 1.08 and 10.09 ± 0.70 μg/mL, resp., compared with the pos. control acarbose (IC50 = 6.47 and 44.79 μg/mL), resp. In addition, by utilizing the β-carotene linoleic acid and DPPH methods, the 2a compound showed the highest antioxidant activity compared with pos. controls. Moreover, the 2a compound showed potential anti-lipase activity with an IC50 dose of 107.95 ± 1.88 μg/mL compared to orlistat (IC50 = 25.01 ± 0.78 μg/mL). A mol. docking study was used to understand the interactions between four derivatives of (2-(phenylthio)-Et benzoate with α-amylase binding pocket. The present study concludes that the 2a compound could be exploited for further antidiabetic, antioxidant, and anti-obesity preclin. and clin. tests and design suitable pharmaceutical forms to treat these global health problems.
