Current mol. simulation methods are unable to efficiently sample the formation of these morphologies because of the large diffusive/energetic barriers. We introduce a modified umbrella sampling-based methodol. that allows sampling of these morphologies from any initial configuration and provides free energy differences between them. Using this methodol., we have studied adsorption behavior of cationic [quaternary ammonium (quat) of 4 and 12 carbon long alkyl tails], uncharged [decanethiol], and anionic [phosphate monoester] surfactants and their mixtures at a gold-water interface. We find that while Coulombic repulsion between the charged head groups of quat-4 limits their adsorption to a sparse layer, stronger hydrophobic interactions between the alkyl tails of quat-12 promote adsorption resulting in a morphol. with adsorbed hemispherical micelles sitting atop a monolayer. Decanethiol mols. adsorb in a densely packed bilayer with the mols. standing-up on the surface in the first layer and lying parallel to the surface in the second layer. Cationic and anionic surfactant mixtures display a synergistic adsorption behavior. These results elucidate the role of mol. characteristics in dictating the nature of adsorbed morphologies of surfactants at metal-water interfaces. 1-Alkanethiol SAMs on AuNPs have shown great potential towards the development of new functional materials. This is mainly due to the formation of dense, tightly bonded and well-ordered systems on the surface of AuNPs. This work showcases how the chain-length of 1-alkanethiols affects the stability and surface properties of AuNPs and the SERS effect. Using exptl. and theor. studies (by means of DFT), this work shows the interaction between 1-alkanethiols of 3 different chain-lengths and AuNPs. The effects on the optical properties, surface charge, stability and SERS were also investigated. The red shift of surface plasmon resonance band was observed as a result of the interaction between AuNPs and 1-alkanethioals. The Zeta potential indicated a strong electrostatic repulsion between AuNPs which was reduced after functionalizing with 1-alkanethiols. The long chain alkanethiol was found to strongly reduce the surface charge due to strong interaction with AuNPs. The calculated nucleophilic center cross-sections for all alkanethiols were found to increase with the chain-length, indicating a strong interaction existed between long chain alkanethiol and AuNPs. The SERS data shows an increase in Raman intensities of all 1-alkanethiols adsorbed on the surface of AuNPs. Both the exptl. and theor. data shows that the alkanethiol with short chain-length possesses the strongest Raman signal enhancement. Due to the adhesion between the polymer melt and nickel (Ni) mold insert in the micro injection molding process, deformation defects frequently occur when the microstructures are demolded from the insert. In this study, self-assembled alkanethiols were applied to modify the surface of Ni mold insert to reduce its surface energy. Exptl. trials were undertaken to explore the effect of alkanethiols coating on the replication quality. After that, mol. dynamics (MD) simulation was then used to investigate the adhesion behavior between the self-assembled coating and polypropylene (PP) by establishing three different types of alkanethiol material. The interaction energy, the potential energy change and radial distribution function were calculated to study the anti-adhesion mechanism. Exptl. results show that all the three coatings can effectively decrease the adhesion and therefore promote the replication fidelity. It is demonstrated in MD simulation that the adhesion mainly comes from the van der Waals (vdW) force at the interface. The arrangement of sulfur atom on the Ni surface results in different absorbing behaviors. Compared with that of the PP-Ni interface, the interfacial energy and adhesion work after surface treatment is significantly reduced. After mol. and thermal characterization, PDEF mech. response and gas barrier properties to O2 and CO2, measured at different temperatures and humidity, were studied and compared with those of poly(butylene 2,5-furandicarboxylate) (PBF) and poly(pentamethylene 2,5-furanoate) (PPeF) previously determined Both PDEF and PPeF films were amorphous, differently from PBF one. As concerns mech. response, PDEF is more flexible than PBF but stiffer than PPeF. Moreover, PDEF is the most thermally stable (temperature of maximum degradation rate being 418 for PDEF, 407 for PBF and 414°C for PPeF) and hydrophilic (water contact angle being 74° for PDEF, 90° for PBF and 93° for PPeF), with gas barrier performances very similar to those of PPeF (O2 and CO2 transmission rate being 0.0022 and 0.0018 for PDEF and, 0.0016 and 0.0014 cm3 cm/m2 d atm for PPeF). Lab scale composting experiments indicated that PDEF and PPeF were compostable, the former degrading faster, in just one day. The results obtained are explained on the basis of the high electronegativity of ether oxygen atom with respect to the carbon one, and the consequent increase of dipoles along the macromol. Fermented ginger paste is a traditional condiment in South East Asia used to marinate meat to extend the shelf life and improve the taste. The present study aimed to determine the metabolomics profile of fermented ginger and the effects on the shelf life of chicken meat. Sterilized chicken meat slices were marinated using the fermented and fresh ginger paste and incubated at 8°C to determine the effects on the microbial growth. The bioactive metabolites were identified using 1H NMR based anal. The results demonstrated that fermentation significantly (p<0.05) increased the antibacterial activity of the ginger paste against Salmonella enterica serotype Typhimurium (97%), Listeria monocytogenes (97%) and Staphylococcus aureus (100%), with the microbial load significantly (p < 0.05) reducing to 4.0 and 4.5 Log10 CFU g-1 in the chicken meat slices marinated in fermented ginger. Fermented ginger paste significantly reduced the pH value, moisture content and water activity of chicken meat slices after the incubation for 2 days at 8°C. A total of 25 metabolites were identified in the fermented ginger paste. These results revealed the potential application of fermented ginger paste to enhance the safety of chicken meat via reducing the microbial load.
